Lulu's Date Nut Cake
When Dad married Mom in 1957, he asked her to learn two of his family recipes -- his great-aunt's date nut cake that his mom, Lucille (Lulu) made, and pinto beans. Mom always made date nut cake at the holidays for us and for gifts. Dad (who is 92) still has to make his own beans.
The 6" (1.25 lbs) small cake and the loaf (1.25 lbs) easily serve six to ten people. Or one. An 8" (2.5 lbs) serves ten to fourteen. Or one. A 10" (3.25 obs) serves up to twenty.
Date nut cake keeps well-wrapped in the fridge for at least two months (when hidden) if not up to six. Also freezes well.
