Savory Cheese Cookies

A take-off on a longtime mom/daughter favorite we still pick up at a local bakery in Austin. These roughly 2" rounds with a crisp shortbread consistency make a great standalone snack, a perfect hors d'ouvres with wine or a cocktail, or a delicious accompaniment to a bowl of soup. Addictive, frankly. For now, we only make basic cheddar with a hint of cayenne. 
 
300g container (approximately 30-40 cookies).
 
Cheddar cheese, flour, butter, salt, cayenne.
