Savory Cheese Cookies

A take-off on a longtime mom/daughter favorite we still pick up at a local bakery in Austin. These roughly 2" rounds with a crisp shortbread consistency make a great standalone snack, a perfect hors d'ouvres with wine or a cocktail, or a delicious accompaniment to a bowl of soup. Addictive, frankly. We're making both basic cheddar and blue cheese varieties, both with a dash of cayenne.
 
300g container (approximately 30-40 cookies).
 
Cheddar cheese or blue cheese, flour, butter, salt, cayenne.
